چکیده
Currently, meat consumers are more conscious about the authentic products linked to their origin, which generates a growing demand for labeled sheep meat. In eastern Morocco, Beni-Guil (BG) is Protected Geographical Indication (PGI) product. This study aimed assess variation of intramuscular fat quality BG in its cradles (Cr). The chemical composition longissimus lumborum muscle was evaluated from 20 female lambs obtained two main breed (Ain Beni-Mathar (BG-Cr1) and Tendrara (BG-Cr2). results show that FA profile affected by Cr (p<0.05). oleic acid, palmitic stearic linoleic acid dominants analyzed meats. polyunsaturated fatty acids (PUFA)/saturated (SFA) PUFA n-6/PUFAn-3 ratios respectively range 1.15 5.02 BG-sheep meats Cr1 1.36 10.73 those Cr2. Overall, indicate have an interesting FAs with favorable indices. Thus, this provides new information on lipid BG-IGP produced extensively typical Moroccan breed.

Sheep meat eating quality - June 2000
Almost all consumers who buy sheep meat expect it to be tender and flavoursome. Toughness is caused by four major factors—advancing age of the animal, ‘cold shortening’ (the muscle fibre contraction that can occur during chilling), animal stress [unfavourable meat acidity (pH)], and the cut (i.e. connective tissue content/structure). Meat quality can be improved by careful selection of pastures...

African bushmeat includes ungulates such as forest antelope, known as duiker (Robinson and Bennett 2000), reptiles and large-bodied birds (Bennett-Hennessey 1995), smaller-bodied mammals such as porcupines and cane rat (Fa et al. 1995), and primates. In west and central Africa, bushmeat primates include monkey and chimpanzee (Willcox and Nambu 2007), baboon and colobus (Chapman et al. 2006), ev...
متن کاملReduced Skull Sexual Dimorphism in a Local Sheep Breed
This study estimated the magnitude of sexual dimorphism in a relict sheep from Catalunya (NE Spain), called Fardasca, using geometric morphometric techniques. For these analyses, a total of 18 skull specimens (2 adult males and 16 females) were studied. Our results suggest that the breed is not cranially dimorphic, so sex determination using landmarks described here as criteria is likely to yiel...
متن کاملconsumer’s willingness to pay for indigenous meat products: the case of a Spanish sheep breed
European farmers of indigenous local breeds have benefited from European Union economic support in the past and it is forecast to continue being supported in the future. However, it is in the public debate that economic support cannot last forever. Then, for the long-run maintenance of indigenous local breeds to be possible, the derived meat products from these breeds should be demanded by cons...
متن کاملMeat quality assessment using biophysical methods related to meat structure.
This paper overviews the biophysical methods developed to gain access to meat structure information. The meat industry needs reliable meat quality information throughout the production process in order to guarantee high-quality meat products for consumers. Fast and non-invasive sensors will shortly be deployed, based on the development of biophysical methods for assessing meat structure. Reliab...
